Corn is back!

Finally, corn is back in my grocery store.  This totally made my week.  I have a few recipes that I have been dying to make for awhile, but I had to wait it out.  My schedule got changed up a this week to help cover the weekend, so I got Tuesday off. 

With this random Tuesday off, I got to head to the gym, grocery store, watch Despicable Me (while Cory was at work) and cook dinner. 


Dinner consisted of a meatloaf, full of red peppers and onions.


We also had BBQ Roasted Potatoes, which I had done a test run on when my Grandpa and Dad were here.  They are just red potatoes tossed with garlic salt, cayenne pepper, onion powder and a few other spices.


This was my favorite part of dinner...Tomato, Corn , and Avocado Salad.  It also has a few green onions, olive oil, lime juice and salt & pepper.  I could eat this every day!

Feeling Normal

I believe that for the 6 people that may actually check this blog once in awhile, the big news is officially out.  In October, Two Fins will become Three Fins!  Today marks hitting week 14! Slowly but surely, we are chugging along. 

The smallest Fin ( now the size of a lemon) is finally letting me feel like an almost functional human being again.  I can now operate on regular hours of sleep again, go to the gym, and have energy to cook real dinners.  On the down side,  I seriously am losing my mind.  Apparently its called pregnancy brain and it does go away, but its crazy!  I always make a detailed list for the grocery store that is written in the rough order of the aisles ( a little ocd, i know) and the past 3 weeks I have forgotten something very important.  Meat for the meatballs, Pizza Crust for the Margherita Pizza and this week, Ravioli for the Baked Ravioli.  It is out of control!

Yesterday I was feeling good, especially after a visit to Russell, so I made some dinner and baked cookies for a co-worker.

Back in March, Jimmy and I made a bet on our secondary brackets for March Madness.  Needless to say, I lost and I finally made good on my bet.


After making 6 dozen of these bad boys, I moved on to a new dinner last night!

Traveling Men...

April means an annual visit from my Grandpa and Dad on their drive back from Arizona.  The first few years the weather was rainy and cold, but this year we got really lucky.  All week , the weathermen were predicting thunderstorms for Sunday, and we woke up to a beautiful spring day!

Its finally spring.  Flowers are out....

and the sky was blue!

Since it was so nice out, we hung out on the porch all afternoon, while Cory smoked ribs.

Making me nervous...

We have a tree in our front yard that has been dying a little bit more every year since we have lived in this house.  And this past sunday, it finally had to come down.  Cory recruited his friend Ryan to help him chop down the tree.  I peeked outside occasionally to make sure that no one needed to go to the emergency room and that all power lines were still intact.

A few branches had already come down...notice the power lines right next to the tree.

I'm Back....

...I know, I know.  I've been a bum that the last few weeks, but I am still here and finally have a new post :)

A few weeks ago, I made a new recipe that was recommended to me by a friend.  The recipe came from the Pioneer Woman blog, which you should check out if you haven't.

It was a chilly Sunday that was needing White Chicken Enchiladas.  They were not to hard to make.  I was most concerned with the 3 cans of green chile's that the recipe calls for.  I can not do spicy food.  Never have, and I don't see that changing anytime soon.  Jessica promised me that she can't do spicy food either and the enchiladas would be okay.

Even so, after I chopped them all, I made Cory do a spicy taste test for me.  No way I was going to taste them first.

The Annual Chariot Races

The whole reason for our trip to Wyoming was the annual Chariot Races.  The races are sponsored by the Lions Club and are held about 4 miles outside of town.  We got lucky and had great February, Wyoming weather.  It was about sunny and 40, with quite the breeze.  The boy scouts were selling snacks and hot chocolate ( which we doctored up with Jim Beam and Peppermint Schnapps).

This kid was one of the first things we noticed.  Not only is it a hat, it is some sort of animal carcass...on his head.


There are ten races held on Saturday.  For each race, you are able to bet on a team.  The betting is determined by an auction and was a little confusing.  It was entertaining to listen to because the auctioneer knew just about everyone who was betting. 


The track is about a quarter mile long and everyone can pull up their pickup truck and get cozy.  It looked like we were in some sort of Ford commercial.

These cowboys stayed at the end of the track, I think to keep the racers from riding off into the distance.
