I'm Back....

...I know, I know.  I've been a bum that the last few weeks, but I am still here and finally have a new post :)

A few weeks ago, I made a new recipe that was recommended to me by a friend.  The recipe came from the Pioneer Woman blog, which you should check out if you haven't.

It was a chilly Sunday that was needing White Chicken Enchiladas.  They were not to hard to make.  I was most concerned with the 3 cans of green chile's that the recipe calls for.  I can not do spicy food.  Never have, and I don't see that changing anytime soon.  Jessica promised me that she can't do spicy food either and the enchiladas would be okay.

Even so, after I chopped them all, I made Cory do a spicy taste test for me.  No way I was going to taste them first.

The final product.  Not nearly as pretty as the Pioneer Woman's, but just as tasty!
