Last Weeks Eats

Last week, there was some good eatin' at the Finley household.  As we all know, I'm super stoked about corn being back in the grocery store.  And after a few 90 degree days, our temps dropped down into 50's so it was the perfect night for Corn Chowder.

The chowder has fresh corn, canned corn, red potatoes and of course, bacon!

I worked last weekend, and before I headed off to work for the evening, I had to satisfy a craving for blueberry pancakes!  There might be nothing better..

Basement, Part II

It was another busy weekend in KC.  On Saturday night, a group of us went out to dinner at Power & Light, then saw Cirque de Soleil 'Dralion' at the Sprint Center.  The next day,  I had a wedding shower to attend for my great friend Jessica who is getting married on June 10th.

In between all of the activities, Cory accomplished a lot in the basement, again.  It is coming along!



Cory got all the framing done this weekend along with two new windows put in.



Last weekend, Cory set up newing wiring for 6 lights.  We have them on order from Rensen House of Lights and they are so pretty.  I can't wait for them to come in!

Seriously?!?!?!?!?!

I just got home from quick trip thru Pier One and TJMaxx (for which I should get a prize for not buying the beautiful green Michael Kors purse) and I grabbed the mail on the way back into the house.  I got a nice little letter saying that I have been summoned for JURY DUTY!

First of all, it is at 8 am ( I normally start work at either 130 pm or 330 pm), its downtown KC, and it is on my day off.  This sucks...

I am really hoping that they will take pity on the pregnant lady.  I will be 22 weeks by then.  Like I will be able to sit thru a trial without having to pee every hour.  And don't even get me started on snacks....how will I keep my trap full???

And we live in Kansas City, so with my luck , it will be a nice murder, or robbery, or something else terrible.

Basement, Part I

First of all, don't fall out of your chair.  Yes, this really is the second post in ONE day.  Its madness!!!!

With a nugget on the way, we are officially trying to get the house in order.  I am in a definite purge mode.  I want all useless crap out of the house.  We are also working on making the basement livable.  The basement won't be fully finished, since there is always the risk of water, but it is going to be so much better.  The plan is to end up with a couple of couches, a nice rug, a new TV and a place to kick kids down to when they are driving us nuts.

To start, we had our ugly concrete floors refinished with a colored concrete.  The process took 5 days, which was mostly putting down the different colors on the floor to get it just right.


This is an almost before shot.  We forgot to take a picture before the floor guys came.  This was after they had sanded off the black gunk that was used to glue down the old linoleum tile.  Also, check out the metal I-beams, that are for support ,so we can't really get rid of them.

This past weekend, around celebrating our friends graduation from pharmacy school, Cory covered the beams, making them look like pretty wooden beams.


They look so pretty now!

His other project for the weekend was to redo the ceiling at the bottom of the stairs and put in a new light fixture.


This may be my favorite thing Cory has done down here so far...

The goal is to have the basement done by Cory's 30th Birthday party...June 11th!  The countdown is on.

Corn is back!

Finally, corn is back in my grocery store.  This totally made my week.  I have a few recipes that I have been dying to make for awhile, but I had to wait it out.  My schedule got changed up a this week to help cover the weekend, so I got Tuesday off. 

With this random Tuesday off, I got to head to the gym, grocery store, watch Despicable Me (while Cory was at work) and cook dinner. 


Dinner consisted of a meatloaf, full of red peppers and onions.


We also had BBQ Roasted Potatoes, which I had done a test run on when my Grandpa and Dad were here.  They are just red potatoes tossed with garlic salt, cayenne pepper, onion powder and a few other spices.


This was my favorite part of dinner...Tomato, Corn , and Avocado Salad.  It also has a few green onions, olive oil, lime juice and salt & pepper.  I could eat this every day!
